Festival of Lights, Night Seven

And so we come to night seven.  This will be the last of the recipes from my Chanukah dinner.  Tomorrow’s post will talk a bit about the person who made the Hanukkia above.  So my final recipe is another dessert sauce.  This one is a hot fudge sauce. It’s really good.  It was on the back of a Ghirardelli baking bar.  So, without further ado:

Ghirardelli Signature Hot Fudge Sauce


1 bar (4 oz) bittersweet chocolate, broken into pieces (I used milk chocolate.  Don’t do that.  The solids in the milk break up and the sauce separates.  Tastes good but looks ugly)

4 Tablespoons of unsalted butter, cut into chunks

1 1/2 cups of sugar (I used less when I used the milk chocolate bar so if you’re ignoring my advice and using a milk chocolate bar, decrease the sugar)

1/2 cup water

1/4 cup light corn syrup

1 teaspoon vanilla


In a heavy saucepan, combine the chocolate, butter, sugar, water and corn syrup. 

Stir it over medium heat until it’s all melted together and smooth.  Let it boil and then turn the heat down and let it simmer for about 10 minutes.  Stir it once in a while.  After ten minutes, remove it from the heat and stir in the vanilla.  Pour over ice cream, into milk or just eat it with a spoon.  Mmmmm…. can’t go wrong with chocolate!
